Soul-Soothing African Peanut Stew

This stew is not only soul-soothing but also is belly-warming! It's creamy texture accented with crunchy peanuts and bursting flavor is perfect for a cozy night at home with family and friends (or just you and your pet). 🥰

Ingredients


  • 1 tsp extra-virgin olive oil (or avocado oil)

  • 1 medium sweet onion, diced

  • 3 cloves garlic, minced

  • 1 red bell pepper, diced

  • 1 jalapeño, seeded, if desired, and diced (optional)

  • 1 medium sweet potato, peeled and chopped into 1/2 in pieces

  • 1 (28-ounce) can diced tomatoes with their juices

  • Fine grain sea salt and freshly ground black pepper

  • 1/3 cup natural peanut butter

  • 4 cups vegetable broth, plus more as needed

  • 1 1/2 tsp chili powder

  • 1/4 tsp cayenne pepper (optional)

  • 1 (15 ounce) can chickpeas, drained and rinsed

  • 2 handfuls of baby spinach or destemmed, torn kale leaves

  • Fresh cilantro or parsley, for serving (I use basil sometimes as well)

  • Roasted peanuts, for serving


Method


  1. Heat the oil over medium heat in a large saucepan. Add the onion and garlic and sauté for about 5 mins or until the onion is translucent.

  2. Add the bell pepper, jalapeño (if using), potato, and tomatoes with their juices. Raise the heat to medium-high and simmer for 5 more minutes. Season with salt and pepper.

  3. Wisk together the peanut butter and 1 cup of vegetable broth, in a medium bowl, until there are no clumps remaining. Stir the mixture into the vegetables along with the remaining 3 cups of vegetable broth, chili powder, and cayenne (if using).

  4. Cover the pan with a lid and reduce the heat to medium-low. Simmer for 10-20 minutes, or until the potatoes are fork tender.

  5. Stir in the chickpeas and spinach. Cook until the spinach is wilted. Season with salt and pepper.

  6. Ladle the soup into bowls and garnish with herbs and roasted peanuts.

Personal Notes and Tips


  • I always use golden Yukon potatoes instead of sweet potatoes just because that is what my family prefers. This recipe is still delicious no matter what kind of potatoes you use (other than rotten potatoes). Just take into account that you will need a couple potatoes if you are using a smaller kind.

  • My mom actually adds a little dash of maple syrup to her's to make it a little more sweet. I tried it, I think it is good either way.

  • Another delicious option is adding in some cooked rice.
