Effortless Cashew Pasta

Your days of relying on boxed mac 'n' cheese for a quick pasta meal are over! Now all you have to do is just blend 5 simple ingredients while your pasta boils and voila! You got yourself a nutritional, tasty, and quick meal! Yes, having a meal with all three of these elements is possible. Why don't you just see for yourself...

Ingredients
Sauce
1/3 cup cashews
1 Tbsp nutritional yeast
1/2 tsp salt
1/4 tsp onion powder
water
Pasta
Pasta of your choice
Veggies
Tofu or tempeh (optional)
Method
Boil the pasta of your choice.
Blend all of the sauce ingredients until smooth. Use about 1/2 cup water, depending on how thick you want it.
Heat up some veggies and pre-marinated tofu or tempeh if you would like.
In a bowl, combine the pasta, veggies, protein, and the sauce.
Top with some roasted cashews or some micro greens for pizzazz ✨🤗 (and of course the added nutritional benefits).
Personal Tips and Notes
I didn't have onion powder, I only had onion salt, so I just didn't add the salt.
I recommend using a protein pasta. My favorite is chickpea pasta!
It's very helpful to keep some frozen veggies and/or fresh veggies stocked in your fridge so you can always be prepared to whip up simple delicious meals like this.
